Valentine’s Day – French toast with cinnamon bananas

french toastHappy Valentine’s Day to all our readers! Today’s recipe is for French toast with cinnamon bananas – a great start to a romantic day!  It is also a dairy free recipe for those who are intolerant to cow’s milk.

What you will need:

  • 2 eggs
  • 6tbsp soya milk alternative, eg Alpro
  • 2 tsp olive oil spread
  • 2 slices thick wholemeal bread
  • 4 tsp caster sugar
  • 1 banana, sliced
  • ¼ tsp ground cinnamon

How to put it together:

Break the eggs into a shallow bowl and beat, add the soya milk alternative and lightly beat together with a fork. Use a heart-shaped cutter to stamp out 2 hearts from each slice of bread.

Heat the olive oil spread in a large non-stick pan, whilst this is melting, dip both sides of the bread in the egg. Add the soaked bread to the pan, cook for a couple of minutes. Turn over the bread, cook for a couple more minutes until lightly browned.

Add the bananas to the pan and sprinkle with cinnamon, cook for a couple of minutes, turning as needed. Serve on top of the eggy bread, sprinkled with sugar.
