Three Great ‘Comfort Food’ Recipes You Need To See

comfort food

I’ve been looking through the weeks posts from the ‘foodie blogosphere’ for comfort food. There’s been some really fab ideas that need a mention. The recipes I’ve selected for today are great examples of comfort food, ones that I would just love to have. The sort of things that I will definitely be in the mood for this weekend! Once you’ve had a look, I bet you’ll want them too!

Don’t forget to leave a comment below and share which recipe you would chose to cook this weekend…

Perfect Baked Potato Wedges With Avocado Crema – Two Purple Figs

So for this year, I’m making these perfect baked potato wedges with an avocado crema. Potatoes always scream comfort to me. Any type. Any time. And who can resist potatoes when they’re spicy + crispy? The best potatoes to use for this recipe would be a starch loaded potato like the Russet potato. In addition to the crispy factor, the starch also creates this pillowy soft structure on the inside which is unbeatable!

Roasted Rhubarb And Strawberry Crumble Ice Cream – Domestic Gothess

After a period of nothing but cold, rainy days we have at last seen some sunshine in the UK! Finally an excuse to break out the ice cream maker (not that I need an excuse). This roasted rhubarb and strawberry crumble ice cream is an ideal ice cream for spring; full of seasonal fruit with a sweet, fresh, slightly tangy flavour and plenty of chunks of crisp, buttery crumble.

Mini Lemon Cake – Baking A Moment

I just love lemon in the spring! Something about it lifts the spirits and makes everything feel summery (even when it’s not really). This cake is infused with lemon on every level. From the soft, buttery cake to the tart lemon curd filling, to the tangy cream cheese frosting, it all just screams lemon!
