The No-Bake Lemon Cheesecake From My Virgin Kitchen

I love finding simple yet rewarding recipes, and this lemon cheesecake recipe is no exception. Not only is it really easy, mainly pouring ingredients in to a bowl, but there’s no baking involved! Well, apart from melting the butter but then you would have to do that weather you cooked it or not.

I would say this recipe makes for a perfect project for kids to try out this coming weekend. A little warning though, there is potential for a big mess. So supervision would be advised!

The recipe and video comes from Barry Lewis at My Virgin Kitchen. The video itself is a little eccentric and we can skip over the pony joke (though it is kinda funny) and go straight to the ingredients. You have to pause the video to see them but for your convenience I have listed them below.

  • 18 Ginger biscuits
  • 100g of melted butter
  • 400g of cream cheese
  • 2 or 3 lemons for zest and juice
  • 200g of mascarpone
  • 100g of caster sugar
  • 40ml of milk
  • 180ml of double cream
  • 9g of gelatin powder
  • 150ml of water
  • 3tbsp of lemon curd

The finished product actually looks pretty good, and with the amount of lemon involved it should taste pretty good too!
