The Ever So Simple Shrimp & Asparagus Stir Fry

My local French market is full of fruit and veg stalls selling asparagus. Big bundles of green spears fresh from the farmers and just waiting for you to do something wonderful with them. The one thing most people don’t realise about asparagus is that it’s ridiculously easyto cook something amazing with it. You really don’t need any complicated recipes to enjoy asparagus. In fact, the fewer ingredients you use, the better it is.

There’s plenty of great recipes out there, for example the many variations that involve wrapping it with bacon, but I’m going to go with something that’s just as easy – Shrimp And Asparagus Stir-Fry. A lovely and simple dish that comes from Home Cooking Memories…

I love the simplicity of this recipe, I know there’s a few herbs and spices required but as a light meal it’s perfect. Of course the other benefit is that all the cooking take place in the one pan. Who doesn’t love one-pot-cooking!

Just a quick side note, yes you can use prawns instead of shrimps in this recipe. However, here’s something I didn’t know, shrimps are not the same as prawns.

Prawns have claws on three of their five pairs of legs, shrimp have claws on two of their five pairs of legs. Their gills and body shape are different too. As far as cooking them goes, they are virtually identical and interchangeable

Ingredients for Shrimp And Asparagus Stir-Fry

  • 4 tablespoons olive oil
  • 1 pound raw shrimp
  • 1 pound asparagus
  • 1 teaspoons salt
  • ½ teaspoon crushed red pepper
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon low sodium soy sauce
  • 2 tablespoons lemon juice
