Salmon & Asparagus Terrine

salmon and asparagus terrineMary Berry quite often features on our blog and today is no exception as we share her recipe for salmon and asparagus terrine. It’s a really showy starter to offer your guests at your dinner party and is great because you can make it ahead of time so you aren’t in the kitchen all day preparing for your dinner party. I love Mary’s video – she makes it all look so simple and I think her comments about cling film are great. I can’t imagine not having cling film on the shelves in the supermarket but Mary can remember the day when it was introduced to the UK! There’s very little cooking involved – just blanching the asparagus and cooking some fresh salmon. What could be simpler for something which looks so stunning.

Ingredients you will need for your terrine:

  • 150g/5½oz fillet fresh salmon
  • salt and freshly ground black pepper
  • 7 thick stems asparagus
  • 350g/12oz sliced smoked salmon
  • 200g/7oz full-fat cream cheese
  • 75g/3oz softened butter
  • 1 tbsp freshly chopped chives
  • 2 tbsp lemon juice
  • cress, to serve
