Rainbow Jam Tarts – A Great Mother’s Day Treat

jam tartsIt’s Mother’s Day here in the UK on Sunday so how about rustling up some rainbow jam tarts? This is a great recipe for the kids to get involved with and they can also have fun packaging them up ready to hand them over. Dad’s, partners and older siblings can have a hand in this fun recipe too. They certainly take me back to my childhood and they didn’t last very long in the tin as I recall!! The other great thing about this recipe is that you can choose what flavour jams you want to put in the pastry cases – obviously various colours are good hence the title of the recipe!

Ingredients you will need for Rainbow Jam Tarts

For the sweet pastry:

  • 250 g plain flour, plus extra for dusting

  • 250 g icing sugar

  • 125 g unsalted butter, softened

  • a pinch of sea salt

  • 1 large free-range egg

  • 1 orange or lemon

  • a splash of milk

For the fillings:

  • 30 heaped teaspoons of your favourite jams, curds, marmalade’s and jellies
