Do you have a jar of pesto which is lingering in your fridge? You may have used some in a recipe and don’t know what to use the rest for? Well this recipe is perfect for using some of your pesto up and incorporating leeks which are great this time of year. Here’s what Eat Seasonably have to say about the leek including some great tips…

Packed with anti-oxidants and vitamins, the mighty leek can help stave off winter colds. It’s also the perfect partner to potatoes and cheese for deeply satisfying side dishes and suppers.

Our quick and tasty tips:

  • Add chopped and boiled leeks to mashed potato with a good knob of butter and plenty of black pepper.
  • Try wrapping parboiled leeks in smoked ham, pouring over a bit of white sauce, sprinkling over breadcrumbs and baking until golden brown. Great with bread and butter.

So onto the recipe – the rostis are ready made but you can always make your own!

What you need for your Quick Fish and Rosti Pie:

  • 30g butter
  • 2 small leeks
  • 30g plain flour
  • 450ml milk
  • 300g mixed seafood cocktail
  • 2 teaspoons pesto
  • 4 chilled potato rostis
  • An extra 15g butter
