There’s nothing better than fresh peas, frozen or straight from your garden. The question is, what are you going to do with them? The standard answer is, pea and ham soup. However, with some imagination you can do a lot more. How about a risotto that’s not really a risotto? Especially when it takes half the time to make?
The Boys from SortedFood make a guest appearance on Jamie Olivers FoodTube. While their recipe has all the hallmarks of a risotto, instead of rice they use Orzo. If you don’t know what Orzo (also know as risoni) is, it’s a form of short-cut pasta, shaped like a large grain of rice. Perfect for soups etc.
The main flavours of the dish come from the ham and the peas. And to raise everything to a slightly higher level, there’s plenty of parmesan cheese and a good squeeze of lemon juice.
Once the watercress is neatly piled on top, it actually looks rather attractive. Whereas it took half the effort and half the time to make, it will still look as though you’ve gone through a great effort to make a risotto.
