One Pot Loveliness With Chicken, Balsamic Vinegar And Vegetables

After looking out of the window this morning, and noticing it was still raining, things cheered up when I came across this recipe. It comes from food blogger Averie who is based in San Diego. She says it’s a winter dish but I would be happy to eat it at any time!

The recipe is for One-Skillet Balsamic Chicken And Vegetables, I love balsamic vinegar and feel it’s very under used. Certainly you can do more than just dress a salad with it. Also, love the fact that only one skillet (a cast iron frying pan) is used – or as we would say, a one pot wonder. This is one of my favourite cooking methods. Well, my kitchen is tiny and I don’t have that much space, so I don’t always have much of a choice! A great idea with a lovely selection of veggies…

What you will need for One-Skillet Balsamic Chicken And Vegetables

  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon light brown sugar, packed
  • 1 tablespoons olive oil for sauce + 2 tablespoons for cooking chicken
  • 2 teaspoons cornstarch
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon pepper, or to taste
  • 4 thin-sliced boneless skinless chicken breasts (about 1 pound), seasoned with salt and pepper
  • about 2 cups broccoli florets
  • about 1 1/2 cups sugar snap peas (peapods may be substituted)
  • 2 to 4 tablespoons water, optional and if necessary
