Nigella’s Poached Salmon, Avocado, Watercress And Pumpkin Seed Salad

Have you ever tried poached salmon in your salad? It’s actually a lot easier than you think, especially if you follow this recipe by Nigella Lawson. As you know, I love simple recipes that are packed with flavour and this idea is no exception.

The salmon is placed in a pan, along with spring onions and peppercorns. Then, enough water is added to just cover the fish along with a big squirt of lime juice. Apart from some salt, that’s it!

The salad is made with peppery watercress that has roasted pumpkin seeds added to it. A nice crunch to contrast with the poached salmon and the watercress. Putting the whole thing together shouldn’t take anymore than 10 to 15 minutes. Would make a perfect week day lunch or a lazy Sunday afternoon treat.

If after watching the video and reading the recipe in full (see link below) you’re a little confused about cooking times, then join the club. In the video, Nigella seems the think that the fish would be cooked after 7 minutes of poaching. The recipe page states a cooking time of 30 to 60 minutes. If anyone tries out this recipe, please let me know just how long it really takes!
