Mary Berry’s Cherry Cake

Cherry cakeDid you watch the first episode of the Great British Bake Off? It was a great start to the new series with our favourite Queen of the kitchen Mary Berry. The show featured Mary Berry’s cherry cake which was baked in a ring and was drizzled with icing, almonds and cherries. It looked delicious and even some of the contestants managed a good result! If you were wondering how Mary made her cherry cake then you have come to the right place!

Ingredients you will need for your cherry cake:


  • 200g/7oz glacé cherries

  • 225g/8oz self-raising flour

  • 175g/6oz softened butter, plus extra for greasing

  • 175g/6oz caster sugar

  • 1 lemon, finely grated zest only

  • 50g/1¾oz ground almonds

  • 3 large free-range eggs

For the decoration

  • 175g/6oz icing sugar

  • 1 lemon, juice only

  • 15g/½oz flaked almonds, toasted

  • 5 glacé cherries, quartered
