Lamb Cutlets With Chilli And Black Olives


In the last week we experienced a solar eclipse (were you lucky enough to see it?) and it was the official start of Spring. Easter is around the corner along with the clocks going forward which will make the evenings lighter for longer and hopefully the weather will start to get better too. So why not celebrate all of these wonderful things with a recipe for lamb cutlets with chilli and black olives. The recipe comes from Nigella Lawson and is featured in the Nigella Express cook book

Ingredients for Lamb Cutlets with Chilli & Black Olives:

  • 12 lamb rib chops
  • 4 tablespoons olive oil (plus 2 tablespoons for frying)
  • 3 cloves garlic (peeled and sliced)
  • 1 teaspoon dried chillies
  • 1 teaspoon dried oregano
  • zest and juice of 1 lemon
  • 1 teaspoon maldon salt (or ½ teaspoon table salt)
  • 15 pitted black olives (sliced)
  • 1 long red chilli (deseeded and finely sliced (optional))
