Lamb Lagoto – Greek Style Stew

lamb lagotoCold, dark and damp evenings are nothing to look forward to at the end of a busy day but this recipe for lamb lagoto should certainly warm you up nicely. It’s a Greek style slow cooked stew by Andy Harris who is the editor of the Jamie Magazine. There aren’t too many ingredients but that certainly doesn’t mean a lack of taste with all those wonderful herbs and garlic. What will you serve with your lamb lagoto? Maybe some chips as suggested in the recipe or some creamy mash? Delicious!

Ingredients you will need:

 

  • 1 head garlic, unpeeled

  • 4 tbsp extra virgin olive oil

  • 2 kg boned leg of lamb, trimmed and cut into 5cm pieces

  • 6 plum tomatoes, peeled and roughly chopped

  • 1 400g tin chopped tomatoes, or

  • 1 tbsp tomato purée

  • 1 tsp dried oregano

  • 1 tsp dried mint

  • 1 1/2 lemons, Juice of
