In Need Of A Good Winter Soup? Five Chicken Recipes To Check Out!

I love a good winter soup when it’s cold outside. I do what I can to use fresh seasonal vegetables but I don’t often blend them, which is the tendency for many. Sometimes, I just chop up the ingredients rather small, sometimes I get out the potato masher and squish them a bit. It’s all about the flavour and the texture.

What has to be one of the most popular ingredients is chicken. It’s fairly versatile as you can use left over cooked chicken (including the carcass), as well as freshly bought. Also, chicken soup is a traditional remedy for anyone with a cold!

I’ve been looking for some great winter soup recipes, including the unusual, to share with you. From the traditional cock-a-leekie to the Asian inspired bowls of loveliness – here’s what I’ve found…

Cock-A-Leekie Soup – The Domestic Man

Cock-A-Leekie (sometimes spelled Cockie Leekie) is a Scottish soup likely derived from French chicken and onion soup during the Middle Ages. It was later adapted to Scottish regional ingredients (namely, leeks), and sometime down the line prunes were an added element of the dish – probably to increase the dish’s flavor and nutritional profile.

Asian Chicken Soup – Dessert For Two

I eat a lot of chicken noodle soup, still. The year of my life that I suddenly became completely engrossed in food and cooking absolutely everything I ate from scratch, I subscribed to Fine Cooking magazine. Still, one of my favorites. I made a recipe for Asian Chicken Soup off the back cover. The broth was infused with ginger, soy sauce, scallions, and cilantro. The first bite was unforgettable. It’s as if I didn’t think chicken soup could get better, and then it did.

This mildly spiced chicken and vegetable noodle soup is really just a delicious byproduct of my chicken served with amino and sesame oil sauces. You can read that recipe here. I like to serve it with that recipe but if there’s any left over, it’s great served as a light lunch too.

My favourite way of eating chicken soup this week has been to switch the dumplings/carby noodles that I usually add, for spiralised courgette or courgetti/zucchini noodles or zoodles – gosh, so many terms for one vegetable. Also, a splash of creamy coconut milk takes chicken soup to a whole new level.
