Ice cream recipes

ice creamIt’s been belting hot for the past few days and hopefully most of us have been able to eat al fresco whilst enjoying the sunshine. You may have dusted off your barbecue or even gone for a picnic. However, have you been hot enough to fancy an ice cream? Here are a couple of recipes for you to try out so that you are ready to dive into the freezer for a portion the next time you want to cool down. One recipe is for those of us without an ice cream maker and the other is for those who do have one.

The first recipe is from Nigella Lawson.

One step no-churn coffee ice cream – Makes 1 litre.

  • 300ml/10fl oz double cream
  • 175g/6oz condensed milk
  • 2 tbsp instant espresso powder
  • 2 tbsp espresso liqueur (or coffee liqueur)

Whisk all the ingredients together until soft peaks form, and you have a gorgeous, caffè-latte-coloured airy mixture, and then fill an airtight container and freeze for six hours or overnight.

Our second recipe is from Wendy Lewis of Masterchef fame.

Lime cheesecake ice cream – Serves 4

  • 3 egg, yolks only
  • 85g/3oz caster sugar
  • ¼ tub cream cheese
  • 2 tbsp lime curd
  • 150ml/5fl oz double cream
  • 150ml/5fl oz whole milk

Mix the egg yolks with the caster sugar and the cream cheese until smooth. Then add the lime, milk and cream and mix well until the sugar is fully dissolved.

Churn in an ice cream maker for 20 minutes then place in a container in the freezer until needed.
