Start Planning Ahead, The Day To Celebrate Dad Is Just Around the Corner!


It was only a short while ago that US mothers were honored for Mother’s Day. As a mother of three, I very much enjoyed breakfast in bed, beautiful flowers and not having to step foot in the kitchen for an entire day. It was a great day to catch up on reading, rest and relaxation. Unfortunately, Sunday was short-lived and in came Monday again with no invitation. The magical day for Mother’s had past, gone in a flash. Sigh.

I am excited however, that the day to honor our fathers is just around the corner.

My dad was a very big man in stature. At 6’4″, jet black hair, stone blue eyes, and a military drill sergeant by trade, he was rather intimidating. As he was originally from New York, my friends used to ask if he was a member of the mafia. Hmmm. Anything’s possible.

I lost both my mother and father many years ago, but I still celebrate Father’s Day with my husband as our children honor him. For him it’s a day of no yard work, 24-hour sports on TV as he is in charge of the remote, and lots of grilling. His day, his choice right? If he wants to cook, by all means let him!

…maybe this day should be titled Mother’s Day Round 2 🙂


Grilled Veal Chops with Herbed Butter

  • 2-4 veal chops
  • 4 tbsp. whipped butter
  • 2 tbsp. fresh Thyme
  • 1 tbsp. fresh Rosemary
  • 1 tbsp. fresh Parsley, chopped
  • 1 tbsp. fresh garlic, chopped
  • 1/4 cup red wine
  • salt & pepper to taste
  • good olive oil

Place olive oil, red wine, herbs, salt, pepper and garlic in a large Ziploc bag. Add veal chops and allow to marinate at room temperature about an hour, turning once.

Remove from bag and place on a hot grill to get a good sear. Add additional salt & pepper if desired. Grill until desired internal temperature is reached, about 4 minutes per side for a medium rare chop. Top with whipped butter.
