It’s Friday so let’s talk about fish, and in particular spicy Tandoori halibut. The last fish recipe I mentioned was Gordon Ramsay’s Ginger Beer Battered Fish And Mushy Peas, which is still proving to be very popular. Well, we’re back with Gordon and this time looking at his recipe for Tandoori Halibut with Raita.
Of course, the secret to getting this recipe right is to ensure you have the Tandoori spices already to hand. Most supermarkets now carry good ranges of exotic spices, getting the ones required for this recipe shouldn’t be to difficult. I’ve listed the ones used in this recipe below after the video.
Once you have the spices to hand, you can make the Tandoori paste fresh and exactly when you need it. This ensures that flavours are not lost, as they often are when you buy curry pastes in a jar.

- Coriander seeds
- Garam Masala
- A lemon (for it’s juice)
- Tomato puree
- Groundnut oil
