Gooseberry Crumble Cake

gooseberry crumble cakeA friend of mine is very kindly going to be giving me some of her home grown red gooseberries so you can imagine how keen I was to look up recipes using these fabulous little fruits. There were obviously a fair few to choose from but I’ve opted to share with you Nigel Slater’s recipe for gooseberry crumble cake. It was featured in Red magazine online and serves 8 people.

Ingredients you will need for your Gooseberry Crumble Cake:

Gooseberries: 300g
Butter, softened: 180g
Golden caster sugar: 90g
Light muscovado sugar: 90g
Eggs: 2
Ground almonds: 80g
Self-raising flour: 150g
Vanilla extract: a few drops

For the crumble:
Plain flour: 110g
Butter: 80g
Caster sugar: 2 tablespoons
