Going French with Raspberry and Lemon Madeleines

Madeleines are very popular in France. Consumed at breakfast with a bowl of hot chocolate and eaten by young children when they get back from school – quatre heures. They are massed produce for supermarkets and a sign of a great chef when they are made absolutely perfectly. Are you brave enough to give it a go?

The recipe we are featuring comes from Rachel Khoo, a relatively new celebrity chef…

Croydon-born cook and food writer Rachel is a chef, a twice-published author and a self-confessed food creative. Her passion for food took her to the French capital some years ago where she trained at Le Cordon Bleu. She went on to open her own restaurant – the smallest in the city, with just two covers – in her Belleville flat, and it went down a storm with the notoriously tough French critics.

Great credentials and her recipes seem authentic. As is her kitchen, small and cramped like many are in Paris.
