What you will need for Fruit & Nut Tray Bake

  • 225g plain flour
  • 30g icing sugar, sieved
  • 110g butter
  • 2 eggs
  • 170g caster sugar
  • 85g glace cherries, halved
  • 85g walnuts, chopped
  • 85g desiccated coconut
  • 1 baking tin 18cm x 27cm, greased
  • Heat the oven to 180°C, Gas 4

How to put it together

Sarah says…

“Stir the flour and icing sugar together, rub in the butter until the mixture resembles fine breadcrumbs. Press this mixture evenly and firmly into the tin. Whisk the eggs with the caster sugar until light and frothy. Stir in the glace cherries, walnuts and desiccated coconut. Spread this mixture evenly over the flour sugar and butter base. Bake for 25 minutes approx, the top should be brown and the fruit and nut mixture beneath it slightly gooey. If it browns too quickly, reduce the oven temperature.

Leave in the tin to cool. Cut into the desired number of pieces.
