From the frugal chef – Banana Sultana pancakes

One thing we have not mentioned in quite some time, if at all, is pancakes. For this recipe, we visit again that great source for frugal cooking, “A Girl Called Jack”. Last time we looked at her recipe for Carrot, Cumin and Kidney Bean Burger’s.

Not everyone is blessed with a food budget to buy exactly what’s needed. Something I think a lot of cookery shows forget. Besides, being creative with small budgets takes more skill, in my humble opinion.

Ingredients for Banana-Saultana Pancakes

  • 100g flour
  • 100ml milk
  • 1 egg
  • 1 banana, or 2 if you want to go wild
  • Handful of sultanas
  • 2 tbsp oil

Directions

Finely slice the bananas and – depending on their ripeness – either mash them with a fork or chop chop chop them into pieces. Add to a large mixing bowl.

Add the flour, and a teaspoon of bicarbonate or baking powder if using plain flour.

Add the sultanas, egg and milk and mix together with a fork to form a smooth batter.

Heat the oil in a frying pan (I’m still making do with that wok, which presents its own special challenges..) and add a tablespoon of batter. Cook on a medium heat for a minute or two on each side. Repeat until all of the batter is used up.

Serve in a heap with optional lemon, sugar, honey, warmed peanut butter – the choice is yours!
