#FoodBloggerFriday: Chicken Kale Salad With Blackberries

It’s #FoodBloggerFriday again and today we visit Chilly Frosting. This foodie blog is run by Elena, an Italian living in Bahrain with her husband Hassan and her chihuahua called Pixie.

I personally love salads, especially when they are slightly unusual. What initially caught my eye was the use of blackberries. Can you really put them in a salad? If you putting feta cheese in and a slightly sweet dressing then yes, you can get away with it.

This salad is all about texture and flavour. Blackberries, feta and a little chilli pushing the flavour forward. The Walnuts provide the crunch and the kale helps to bring it all together. What really binds it in to a bowl of loveliness is the dressing.

I must admit I’ve not used peanut butter in a dressing before but then I don’t really like it in the first place. However, honey, mustard and orange juice are a great combination. Helps to liven the flavour up and should mix very well with the salad.

If you want to serve something a little different to guests then try this salad out. I’m pretty sure your’re going to impress if you do!

What you will need to make Chicken Kale Salad With Blackberries

For the salad:

  • 134 grams (2 cups) finely chopped kale
  • 1 tablespoon extra virgin olive oil, divided
  • 120 grams (4.23 ounces) boneless, skinless chicken breast
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon chili powder
  • 145 grams (1 cup) fresh blackberries
  • 37 grams (1/4 cup) crumbled feta cheese
  • 20 grams (1/4 cup) walnuts, crushed

For the honey mustard dressing:

  • ½ tablespoon Dijion mustard
  • 1 teaspoon peanut butter
  • 1 teaspoon honey
  • 2 tablespoons freshly squeezed orange juice
  • ½ tablespoon extra virgin olive oil
  • ¼ teaspoon salt
