Mary Berry’s Florentines

Quite a tricky one this…what on earth do you do when someone asks you to zigzag the bottoms?! All is revealed in her recipe. Be careful when you weigh out your ingredients as this is very important for the perfect Florentine.

Mary Berry’s recipe makes 18 biscuits. You will need a sugar thermometer.

Ingredients you will need:

  • 50g/1¾oz butter

  • 50g/1¾oz demerara sugar

  • 50g/1¾oz golden syrup

  • 50g/1¾oz plain flour

  • 25g/1oz dried cranberries or glacé cherries, finely chopped

  • 50g/1¾oz candied peel, finely chopped

  • 25g/1oz almonds, finely chopped

  • 25g/1oz walnut pieces, finely chopped

  • 200g/7oz plain chocolate (70% cocoa solids)
