flatbread, feta and chickpea salad


I am beginning to think I talk to much about flat bread. But it’s easy to make and quite versatile. Something any one can make in fact. So this recipe by Gordon Ramsay caught my attention for two good reasons. First, well it’s flat bread and the second is that he admits to liking vegetarian food! Mr Ramsay has got himself it to trouble more than one with his comments about the meat free way of life.

Even though the recipe is called a salad, it’s more like a dip or spread. The flat bread is cut in to strips and toasted, it makes a prefect accompaniment to the melting cheese and chickpea’s.

The flat bread used in the video below is pita bread, sliced in to strips and coated with a olive oil and paprika mix. It’s then toasted so it becomes crisp.

Other ingredients include,

  • one red onion
  • one tin of chickpeas
  • feta cheese
  • chopped chilli (strength is up to you)
  • parsley
  • garlic
  • lemon juice and zest
