Fabulous Baker Brothers – Passion Fruit Brûlée Tarts

passion fruitThe Fabulous Baker Brothers Tim and Henry Herbert bring us today’s recipe for passion fruit brûlée tarts. I love passion fruit and anything flavoured with this sweet tropical fruit. The riper the fruit the more wrinkly they are so look out for that when you are buying them. I think today’s recipe looks delicious and would look quite impressive with a dusting of icing sugar and maybe served with some colourful berries on the side of the plate. Ingredients you will need:

For the pastry

  • 225g plain flour
  • 100g icing sugar
  • 110g cold butter
  • 4 egg yolks
  • Pinch of salt
  • Splash of milk
  • 1 vanilla pod, split and seeds scraped out

For the custard

  • 600ml double cream
  • 6 egg yolks
  • 2 tbsp golden caster sugar
  • 2 tbsp cornflour
  • 1 vanilla pod, split and seeds scraped out

To finish the tarts

  • 1 egg, beaten
  • 6 passion fruit, halved
  • 6 tsp caster sugar
