A most elegant dessert – Toffee Pear Galettes

I love featuring the works of cooks, bloggers and foodies. Today is no exception as we visit again the Orgasmic Chef, we mentioned her before in “This could be the best thing for left over chicken – ever!“. A great recipe as I am sure you will agree.

This dish is fairly simple, the sort where items can be created ahead of time before serving. Just a matter of putting things together at the last minute.

As preparation is down to a minimum, you can spend some time on presentation. Accompany the dessert with a jug of cream or warm custard. Keeping things simple will make the most of this lovely recipe…

What you will need for Toffee Pear Galettes

Poached Pears

  • 2 pears
  • 1 vanilla bean, split and seeded
  • 2 cups sugar
  • 3 cups water
  • ½ lemon juiced
Toffee Sauce – (Recipe by Nigella Lawson and it makes WAY more than you need. Use the rest on ice cream!)
  • ¾ cup plus 1 tablespoon brown sugar
  • 2 tablespoons dark corn syrup (I only had light and it worked just fine)
  • ¾ stick butter
  • ⅔ cup heavy cream
Tarts
  • 2 sheets puff pastry (185 grams)
  • 1 egg (for egg wash)
