Easy Passion Fruit Soufflé With Caramelised Banana’s


Soufflé’s are normally regarded as being very difficult. Some recipes are a little complicated or require lots of practice. This one by James Martin is fairly straight forward to follow as can be seen in the video below.

The ingredients include ready made custard, passion fruit and bananas. As James mentions in the video, ensure your passion fruit has wrinkly skin to ensure it’s ripe and ready to use.

What you will need for Passion fruit and custard soufflé

For the soufflé

  • butter, for greasing

  • 2 tbsp caster sugar

  • 4 medium free-range egg whites

  • 120ml/4fl oz fresh ready-made custard

  • 1 passion fruit, halved, seeds and pulp scraped out

For the bananas (optional)

  • 25g/1oz butter

  • 1 tbsp caster sugar

  • 2 medium bananas, peeled and halved lengthways

To serve

  • vanilla ice cream

  • few sprigs fresh mint
