Cumbrian Christmas Bread

Cumbrian Christmas BreadWe are always told that breakfast is the most important meal of the day so how about trying this recipe for Cumbrian Christmas bread on Christmas morning? It’s a traditional spiced bread which is delicious served warm with lashings of butter! What better way to start your festive day before opening lots of presents and cooking for family? If you don’t fancy preparing this bread on the morning then you can always make it the day before and then warm it up in the oven when needed….if you make it last that long!

Ingredients you will need:

30g currants
30g sultanas
55g raisins
20g mixed peel
3 tbsp rum or brandy

For the ferment
17.5g fresh yeast (available from Sainsbury’s superstores) or 6g active dried yeast or 7g fast action yeast
10g caster sugar
75g strong white bread flour
150ml warm water
100ml milk

For the dough
400g strong white bread flour
75g caster sugar
2 tsp salt
1/2 tsp mixed spice
1 medium free-range egg
1 tbsp black treacle
40g unsalted butter, melted and cooled a little
All of the ferment from above
Vegetable oil for greasing
