Want Less Stress This Christmas? Try This All-In-One Roast Lamb Recipe

There are so many different options when it comes to the Christmas Day main meal. Most will go for a roast, something like chicken, turkey or perhaps beef. But how does lamb grab you?

What you really need is a simple dish that doesn’t need the endless prep. A recipe that doesn’t demand that you stay in the kitchen for most of the day. What we need is something simple that you can slam in the oven and let the magic happen.

With all that in mind, I would like to draw your attention to this great roast lamb recipe from FoodJam, it’s pretty much a ‘one-pot-wonder’, well actually a ‘one-roasting-pan-wonder’ to be precise. This is what Deon from the site says…

The really wonderful thing about this is that it is one pot cooking at its best, you prepare all your vegetables and pop them in the bottom of the pan, the lamb is placed on top and all the juices from the lamb drip down into the vegetables and flavour them, as this is slow cooked the lamb is meltingly tender and the anchovies have been absorbed by the meat and flavour it perfectly.

Yes, it’s got anchovies and lots of other goodies too…

What you will need for FoodJam’s Roast Lamb

  • 1 2kg Shoulder of Lamb
  • 1 tin Anchovies
  • 1 head Garlic
  • 1 bunch of rosemary as much as you buy in the supermarket packet
  • 3 leeks trimmed and roughly sliced
  • 2 onions quartered
  • 1 lemon quartered
  • 500 grams new potatoes simply halve them and pop them in.
  • 1/4 cup Olive oil use rapeseed if you prefer
  • salt and pepper to taste –  about 20 grinds of each, ten for the meat and ten for the vegetables

So relax and avoid the strain of cooking big this Christmas. With this recipe, you’ll have no excuses not to watch the Great Escape (again)!
