Christmas Canapes: Prawn, Chorizo & Tomato Kebabs

kebabsThe Christmas party season is now in full swing and if you are hosting a party you may need some ideas on what to feed your hungry guests. Therefore we are focussing on Christmas canapes this week and our first idea is for Prawn, Chorizo & Tomato Kebabs by chef Gordon Ramsay. These will look great on any buffet table and are easy to put together. The recipe below makes 12 kebabs and are only 26 calories each.

How to make your Prawn, Chorizo & Tomato Kebabs:

  • 6 cherry tomatoes, halved
  • 2 garlic cloves, thinly sliced
  • A couple of sprigs of thyme, broken into small pieces
  • Olive oil
  • 12 raw tiger prawns, peeled and head off
  • 12 slices of chorizo from a whole sausage
  • 12 basil leaves, cut in half
  • Mini skewers to serve

Heat the oven to 180C/fan 160C/gas 4. Put the tomatoes cut-side up on a baking sheet, top with a thin slice of garlic, a piece of thyme, a drizzle of olive oil and sprinkle of salt on each. Cook for 30 minutes.

Grill the chorizo and fry the prawns in a little oil, keeping everything warm. When the tomatoes are done, onto each skewer push a prawn, a piece of basil, a piece of chorizo, some more basil and a tomato half.
