Cauliflower For Breakfast? Check This Out Before Saying No!

I love cauliflower, I use it in curries, Chinese dishes and quite often have it with a thick cheese sauce. But the idea of serving it for breakfast has never struck me as something I would want to do, until now that is.

Kim from Cauliflower Eats has submitted her recipe for Sunshine Cauliflower Rice Breakfast Bowl. You’ll notice it has eggs, bacon and spinach. There’s even avocado! You could say this is a fairly healthy breakfast, depending on how you cook the eggs and bacon!

We have our usual cauliflower rice breakfast bowl favorites: sauteed spinach, creamy avocado, crispy bacon pieces and a fried egg. Then we give a fresh, new twist to our traditional cauliflower rice base with some orange zest. Any citrus-flavored rice is a winning combo in almost any dish, so why not bringing it to the breakfast table!

What you will need for Sunshine Cauliflower Rice Breakfast Bowl

  • 1 tablespoon coconut oil or extra virgin olive
  • 2 1/2 cups cauliflower rice
  • Salt and pepper, to taste
  • 2 slices bacon
  • 2 packed cups of spinach
  • 2 whole large eggs
  • 1/2 avocado, peeled, pitted and insides cubed or sliced
  • 1 tablespoon finely grated orange zest

      Cauliflower is so underrated, I love it in curries and soups. Never thought to try it at breakfast. Must give it a go!
