Broccoli For Breakfast? It’s not as strange as it sounds!

Before I start talking about the idea of eating broccoli for breakfast, let’s for a moment look at the trend that is best described as, adapting main meals so you can eat them for breakfast. It’s becoming more and more common. The recipes I found for this post exemplify this trend, Breakfast Quesadillas, Breakfast Frittata and Breakfast pizza! I’ve also seen breakfast muffins and breakfast casseroles!

Anyway, back to broccoli, which is now coming into season. I’m starting to see it more often at my local market though the prices are a bit high at the moment. For most people, the green veg is only worth boiling and serving with a roast. There’s much more you can do with broccoli, which I am sure many vegans and vegetarians will attest to. I am sure most wouldn’t consider eating it for breakfast but you may change your mind when you see the benefits (info via Wikipedia)…

…a 100 gram serving of raw broccoli provides 34 kcal and is an excellent source (20% or higher of the Daily Value, DV) of vitamin C and vitamin K. Raw broccoli also contains moderate amounts (10–19% DV) of several B vitamins and the dietary mineral manganese, whereas other essential nutrients are in low content. Broccoli has low content of carbohydrates, protein, fat, and dietary fiber.

Boiling broccoli reduces the levels of sulforaphane, with losses of 20–30% after five minutes, 40–50% after ten minutes, and 77% after thirty minutes. However, other preparation methods such as steaming, microwaving, and stir frying had no significant effect on the compounds. Broccoli also contains the carotenoid compounds lutein and zeaxanthin in amounts about 6 times lower than in kale.

In case you’re wondering, sulforaphane is a good thing as are vitamins C, K and B. So eating it for breakfast may not seem so strange after all!
