Bird in a BasketThis intriguingly named recipe for bird in a basket comes from Michelin starred chef Andy McLeish who is head chef at Chapter One in Kent. Bird in a basket is simply chicken drumsticks on a bed of home-made coleslaw (which looks like a basket!) – a great recipe to get the kids involved with because of the fun and imaginative name. It’s quick and easy to make and while the chicken is marinading you can get on and make the wonderfully tasty and vibrant coleslaw. A great meal for the family at the weekend and an easy way of getting the kids in the kitchen lending a hand.

Ingredients needed for your Bird in a Basket:

Chicken drumsticks

  • 500g of chicken drumsticks
  • 3 garlic cloves, peeled and crushed
  • 3 tbsp of soy sauce
  • 2 tbsp of honey
  • 2 tbsp of tomato ketchup
  • 1 tsp of ground ginger


  • 1/4 red cabbage
  • 4 carrots, peeled and grated
  • 2 spring onions, washed
  • 3 tsp of sweet chilli sauce
  • 1/2 lime, juiced
  • 3 tbsp of mayonnaise
  • 1 pinch of salt
  • 1 pinch of pepper
