Banana and passion-fruit loaf

passion-fruitThis weekend I felt the need to do some baking! The following is a delish recipe for banana and passion-fruit loaf which some of my colleagues at work tried out for me – I think the result was positive as I came home with an empty tin! I took some pictures along the way as well as the finished result so I hope you enjoy. The only thing I would say is make sure your passion-fruits are ripe. This is generally when they look all wrinkly – mine resembled plums so not quite ripe but mixed with all the other ingredients this wasn’t a problem.

This recipe serves 8-10 and is made in a 19x9cm/8.5 x 4.5″ loaf tin.

Ingredients needed for the loaf:

  • 225g self-raising flour
  • 1/2 tsp bicarbonate of soda
  • 100g butter, soft and cubed
  • 175g granulated sugar
  • 2 large eggs, lightly beaten
  • 3 passion-fruit
  • 3 very ripe bananas

To decorate:

  • 100g icing sugar
  • 1 passion-fruit
  • Dried banana slices (optional)

ingredientsPreheat your oven to 180c/350f/gas 4. Butter your tin and line the base with baking parchment.

mixtureSift the flour and bicarbonate of soda into a bowl. Put the butter and sugar in another bowl and beat until pale and fluffy. I did this by hand but you could always use an electric mixer. Add the beaten eggs and sifted flour mixture alternately to the bowl.

Halve the passion-fruit and scoop out the pulp into a sieve/strainer over a bowl. Using a teaspoon, press and stir the pulp to extract the juice. Discard the leftover seeds. Peel and mash the bananas. I started with a fork but then got out my potato masher as this was quicker! Add the passion-fruit pulp and mashed banana to the cake mixture and mix again.

cookedTip the mixture into a prepared loaf tin and spread evenly. Bake in the oven for 55 minutes, or until golden and risen. Leave to cool in the tin.

To decorate, sift the icing sugar into a bowl. Half the passion-fruit and scoop out the pulp into the bowl (no need to sieve this time). Mix together with a teaspoon. If a little thick, add a tiny bit of water until you get the desired consistency.

finishedTip the cold loaf out of the tin and peel off the base paper. Spoon the glaze over the top of the loaf and decorate with dried banana slices if you would like to. Leave to set for about 30 minutes before slicing.
