Asparagus recipes

Asparagus is around for only a few short weeks before it is out of season again so I’ve found a couple of asparagus recipes for you to make the most of this wonderful super-green veg. I love asparagus simply done – just quickly blanched in water then sprinkled with freshly ground pepper and salt. If you want to be a bit more flash then you could add a home-made Hollandaise sauce and then pop a poached egg on top if you are really trying to impress. All very tasty indeed.

I’ve got two recipes to share today the first being for Asparagus Soup which is low in calories but big in flavour plus it’s ever so easy to make. Whether you decide to serve it as suggested with crusty bread or simply eaten alone, this soup looks delicious. It serves 4. For the full recipe head over to the BBC Good Food website.

asparagus soupIngredients you will need:

  • 25g butter
  • a little vegetable oil
  • 350g asparagus spears, stalks chopped, woody ends discarded, tips reserved
  • 3 shallots, finely sliced
  • 2 garlic cloves, crushed
  • 2 large handfuls spinach
  • 700ml vegetable stock (fresh if possible)
  • olive oil, for drizzling (optional)
  • rustic bread (preferably sourdough), to serve (optional)

The second recipe I’ve found is for Asparagus, Pancetta and Parmesan Linguine with Chive Cream. Slightly more naughty than our first recipe but my mouth is watering just typing about this dish! It is taken from the British Asparagus website which is where you will find the full recipe. It serves 2 people and takes less than 15 minutes from start to finish – perfect for a quick supper.

asparagus linguineIngredients you will need:

8 stems of asparagus
50g of thick cut pancetta (diced)
50ml of double cream
50ml of vegetable stock
150g linguine
2 tbsp chopped chives
2 tbsp grated parmesan
Salt and pepper
