Apple Flapjack Crumble

apple flapjack crumbleThe humble apple – so many varieties and with hundreds of ways to use them it is difficult to choose what to post! Cox’ apples are in season this month and are a really flavoursome eating apple which are great to use in cooking too. Maybe you are lucky enough to have your own tree in the garden? Apples are a very versatile ingredient going together with so many different foods such including pork and cheese. However, you can’t beat a really good apple crumble especially now the weather is getting cooler and the nights are drawing in. I personally love the autumnal weather but with it comes a wanting for lovely comforting food!! This recipe for apple flapjack crumble has a slight twist to the traditional dish and is really easy to make so why not put this on the table for your family and friends this week? This recipe serves six.

Ingredients you will need:

  • 1.1kg eating apples, such as Coxes
  • 3-4 tbsp apricot jam
  • juice 1 large orange


For the crumble

  • 140g porridge oats
  • 100g plain flour
  • 1 tsp ground cinnamon
  • 100g butter
  • 100g light muscovado sugar
  • 1 tbsp golden syrup
