5 Great Soups You Really Should Try Out This Weekend

January is a great time for soups, they’re easy to make and very warming on cold wintery days. They can also be as simple or as complicated as you want. At this time of year, there’s a good selection of vegetables available. If you can, get your ingredients from your local market. Not only do you get a better choice fresh from the farm but you are also supporting local business. I love soups and get just about all my ingredients from my bi-weekly market.

Below are 5 great soups from food bloggers. They range from the simple (Magnolia Days) to the slightly more in-depth (Easy Peasy Lemon Squeezy). From this selection here, my favourite recipe is from Pocket Change Gourmet, love those flavours and the fact it can be made in a slow cooker.

Magnolia Days – Creamy Potato Soup

Creamy Potato Soup is a small batch recipe. It makes two or three servings, possibly four if served in cups. It’s lightly flavored with green onion and celery. I garnish it with sliced green onions. Shredded cheese would also be a nice topping. The soup is decadent and a splurge since it is made with milk, cream, and butter. Everything in moderation, right? Balance it with a simple green salad.

This past weekend I purchased two local, organic hens. After all was said and done, I had enough meat for four dinners, a large batch of chicken salad for lunches, four pints of stock and four beautiful pints of condensed Cream of Chicken Soup. It was the first time I attempted a homemade condensed cream soup, but that’s one less thing I now have to purchase from the store. Plus, I know the chicken from whence this came 🙂 Do you know YOUR Cream of Chicken…chicken?

Dragons and Fairy Dust – Pea and lettuce soup

This weekend I ended up with a lot of lettuce in my fridge. I am not quite sure how I managed it, I usually have a list when I go shopping. This takes account of what I have in stock so I don’t waste food. Somehow I managed to end up with six little gem lettuces. There is only so much lettuce you can use in sandwiches and salads for lunch. I wondered if it would be possible to make soup using the lettuce and decided to make a pea and lettuce soup. It turned out to be a good decision.

Pocket Change Gourmet – Spicy Chicken Tortilla Soup

With the holidays behind us and the bright new year fully in front of us, why not start things off right with this Spicy Chicken Tortilla Soup, that is healthy too? It’s loaded with protein packed ingredients and the best part is that you can toss them all in your slow cooker in the morning and let it work its magic all day long.

Easy Peasy Lemon Squeezy – Minestrone Soup – get those veggies in!

So first up we need to make a batch of this – loads of veggies and very filling, not creamy but super tasty! I will be having this for lunches and will pop at least 3 portions in the freezer for those days where I need some warm filling food

    A pleasure Alison! January does seem to be month of soups. I do like pea with ham but not tried it with lettuce, that’s one I need to try!
